Peter Cham with Finch & Fork in the Canary Hotel and Damien Giliberti of Outpost in the Goodland Hotel. These guys are rockstars in the industry, and as it turns out, in real life too, riding over 300 miles for charity each year. They talk their paths leading up to becoming executive chefs, the dedication and mentorship they received, and now what it is like to run a kitchen.
